New RUBY Modern Diner all set to open a week today

Offering a modern twist to the roots of the American diner, RUBY Modern Diner is set to open its doors on 28th January. Owners Dicky Harrison and Erin Allgrove have spent a year building the Modern Diner concept. They’ve sourced the best produce the region has to offer to build a unique menu including smoky pulled pork, hot salt beef, real hamburgers, homemade waffles and fresh bagels.

Dicky Harrison, one half of Modern Diners Ltd said:

"Our Ruby Red beef comes from a single source in mid Devon - used for our hamburgers and hot salt beef. Our fluffy egg glazed brioche buns are baked by Emma Parkin at Emma's Bread and we've worked with her to perfect the New York-style recipe. We’ve also got delicious ciders from Sandford Orchards and beers from Flat Cap in Cornwall.

Erin Allgrove, the other half of Modern Diners Ltd added:

“Our gelato style ice cream is from Otter Valley dairy near Honiton, our cheese from Hawkdrige near Coleridge and all our pork and chicken is locally sourced and free range. We can't wait for Exeter to enjoy our fresh approach to fast food.”

Bringing a unique dining experience to the city, RUBY offers the flexibility of table service, self- service lounge and walkthrough experience.

Open until 10pm most evenings and midnight on Thursday, Friday and Saturday.
